This one looks ridiculously easy to make, courtesy of JuicyBits.
- Green peel only from 4 limes, cut into 2″ lengths
- 1 cup fresh lime juice
- 1/4 cup sugar
- 30 fresh mint leaves
- 8, 1/4″ slices of peeled fresh ginger
- 1 cup cachaça
- 2-3 bottles ginger beer
Directions:
Combine lime peel, lime juice, sugar, mint and ginger in a pitcher. With the handle of a spoon or a muddler, crush the ingredients and mix. Stir in the cachaca. This will keep in the refrigerator for 6 hours. Before serving, add 3 ice cubes to the alcohol mixture and stir to melt. Fill glasses with ice and pour strained alcohol mixture into glass, filling up halfway. Pour an equal amount of ginger beer on the top and stir to combine. Garnish with more mint if desired and serve immediately.
